Hope you can help.

I am trading in my Olymous C-7000camera with an XD Picture Card.

How can I permanently erase this card to make it unrecoverable.

I know how to formatt the card but I hear images can still be recovered from it.

How do I prevent it?

I don't know if any of the available file shred programs would work with flash memory, but you could try one. Short of that, you could erase all in the camera, format the card in the camera, then take a video until the card is full, then erase and format. Do that about 7 times, and the only thing anyone would be able to recover is parts of the video. Run a file recovery program to see what you get.
