I've been to the Casio website to try and find out if a SanDisk SD Ultra II 2GB cardcan be used in the Casio EX-S600 or Z600 with no luck!

Can anyone help please?

Yes it can, 2GB is the maximum size so don't buy a 4GB card.

What about with the Canon SD600? I'm in the process of buying a Kingston 2 gb SD card. Can this camera handle a 2 gb card?

Thanks,

Steve

Yes and yes ... most all cameras that use SD cards made in the last year can handle up to 2gb size cards. The problem now is there are a lot of new and inexpensive 4gb cards showing up and most cameras can NOT access a card over 2gb in capacity.

It isn't that cameras can't "access" them, its that those are totally incompatible with SD standard which was originally limited to 1GB but later extended to 2GB which is standard's hard limit.
Now Panasonic announced SDHC (SD "High Capacity") standard for higher capacity cards but looks like that naming won't be respected much...

Here's one table of compatible cameras... I think it can be kept that newer cameras of series mentioned in there should work also.
