Multiple will handle most lighting situations.
Centre weighted is very good where your main subject is in front of a background that is very different in lighting. For example photgraphing someone in the shade when the background is in full sun. Spot is also useful where the main subject is a lot lighter or darker than the background. It allows you to meter from a very small area and ignore the rest of the picture area. In short I would use multiple unless you know it would give problems or when looking at the LCD after the shot you can see that the lighting is not as you wanted. |
