How does one go about reading these charts? What information do they display?

Photodo has an article about this (in rather bad English, but it has clear info) that can be reached from this page: http://www.photodo.com/nav/artindex.html. Select the "Understanding the MTF graph" link. A longer article that discusses this can be found here: http://www.normankoren.com/Tutorials/MTF1A.html. FWIW

Just a warning. From what I've read, at least some of the MTF charts that Canon posts are not "Real world" charts. They were produced in a lab with a good dose of theory (instead of practice) behind them. So they are better than what you should expect in the real world.

At least, that is what I've read.

Canon used to have a web page describing the charts easily linked from the lens pages, but they have since removed it. One demerit for them.
