When the flash fires, and before it is charged, the camera resets the SS and Aperture to get a proper exposure without flash, so what you are probably hearing is the camera resetting the aperture and possibly shutter speed.

Yea, think you are spot on there as those readings are the ones that change in the viewfinder when i hear the noise, in camera.
