Default Medium format digital

Other than getting a digital back (way too expensive) for a medium format film camera....is there a camera that allows you to shoot (in terms of shape) medium formati/2 and a quarter.

There are multiple formats for 120 (2-1/4") roll film. Common ones are 6x4.5cm, 6x6cm, 6x7cm which is a very close match to 8x10 ratio and 6x9cm.

Can you be a bit more specific what you want? Are you trying to duplicate the format? That's as simple as cropping. Are you trying to duplicate same depth of field as a simialar medium format camera?

I like the depth of field in medium format, waist level viewing when possible, and the shape....when I initially take the shot. I don't find it the same in cropping afterward.

Short of going to a medium format camera with a digital back you won't get all those features in any camera i'm aware of. The Nikon D1 series has an available waist level viewfinder and of course good ability to limit DOF when needed with large aperture lenses but the format and form factor are probably not what you want.
