My free trial of capture is about to expire and I'm not going to purchase the software. I am thinking of installing a curve but if I wonder if I can "turn it off" if I don't like it in all situations.

Yes, where you loaded the custom curve in the tone compensation menu, you would just set this back to "Normal" or any of the 5 default tone compensation values. The custom curve will stay there and can be used like any of the original tone settings.
