Does anyone, or is it not advisable, fit a UV and a polarising filter, together? If so, what order, i.e.: first on the lens?

There is no reason to have both of those filters on the lens at the same time. Too many filters in use can cause vignetting (clipping of the corners) at a minimum.

The only time I did this is with a IR filter and my primary filter is a Pro1 ultra thin UV filter. I guessed it wouldnt affect the image as it was going to be a long exposure.

But as above the polarising does get affected especially if you are not using a Ultra thin filter in front of it. I suggest you use the polarising filter by itself. Note for wide angles you still get vignetting regardless how thin your filter is. I realise that on my 17-55mmDX and it happens on the wide end.

or you can invest in a Cokin P series system.Filters are quite inexpensive and they will fit all your lens with an adaptor
