I am interested in any experience any of you have with the new Sigma 80-400 HSM or the Sigma 170-500 APO.

I think what you want is the Sigma 50-500: All three lenses are in their 'EX' professional series, but the 170-500 is an older design with no HSM; While the newer 80-400 OS (or Nikon's own AF VR 80-400) has optical stabilization, it too does not have HSM (or Silent Wave)!

Sigma's HSM is like "S" in Nikon and "USM" in Canon in that it's ultra fast in focus as well as silent in operation. The HSM mechanism also allows full-time manual overide of the AF with the focusing ring without having to flip any manual switch first. The 50-500 is quite highly rated, @ f/6.3 it's also a 1/3 stop slower than f/5.6 but barely detectable by most cameras:
