Hello,
I am trying to help a friend who has just bought the Olympus E-500.
Unfortunately the screen doesn 't show the picture he is about to take but only the settings.

What settings (where and how) do we have to change on the camera, so it would show what the camera "sees"?

Anybody who knows how to do that?
The manual wasn't helpful at all, unfortunately.

Some advice would be very much appreciated!

The simple answer is there aren't any settings to do that because it's impossible with that camera.

The longer answer is your friend bought a dSLR, and unless it's a dSLR that has a live view feature (like the E-10, E-20, E-330, E-410, or E-510, or the one or two Canons that have it), dSLRs don't have live view capability...the only way to see what the camera sees is the look through the viewfinder; that's the way dSLRs are.
