I believe sunset mode doesn't allow you to tinker with settings much except for exposure.

I almost never use the Mode settings at the top because it's too automatic. This was taken with ISO 100 (my camera is set to ISO 100 99% of the time). It was also before I started to play around with color mode, so those are set to default. I used center weighted meter. I MAY have set the exposure down one setting so the sun won't overpower.
