Theres no way to switch of the auto jpeg file that gets created, I think nearly all cams do it. What I have seen with a lot of the FZ30 shots that have been posted is that the WB on the FZ30 is usually more accurate than my FZ10's which always has this green shift to it even when I set the WB manually. it means that I have to fix the WB in photoshop. Having not to worry about the WB using RAW is a boon.
Regards setting your exposure to -1 EV, its been a baisc trait of the FZ1/10/15/20/3/5 etc to overexpose by default so a lot of us near enough always underexpose by -1/3 to -1 EV depending on the conditions. I do that a lot with my FZ10 esp if Im taking shots in really low light and I really want the pic. I then make any adjustments that I need to in Pshop.
