Today, I had my children and grandchildren to celebrate Mother's Day. And as I normally do for family gatherings, I cook the main course. And this was my presentation to the Mother of the house. She did not see it until everyone was in place and ready to eat as I kept it covered.

Overkill, Thank you very much. Really do appreciate your comment. The basic recipe for this came from another forum member in Australia, Refinmelb, and believe me it is good. I now know where our cajun jambalaya originally came from.
