You have to set a constant aperture to get the same DOF with each shot.
If you leave the AWB on, the camera will choose a different WB in each shot again, and the ois will try to find vibrations that not exist using a tripod, causing blurred images

Edufloyd I LOVE your HDR photos!!!

Just curious, what would be the outcome if you say chose different apertures to force multiple DOF's?

Apart from a bit of diffraction, I wonder what the net result might be, especially on a subject that the DOF made a noticeable difference.
