Looks pretty good all the way up to 800.

Question, though: what's the point of testing high ISO settings during the day, under sunshine? Isn't the lowest possible ISO always the best in that situation anyway? Not trying to be critical, I'm really just trying to learn.

Lowest ISO gives best quality. But if your subject is moving fast a low ISO might not give enough high shutter speed to stop action. In order to get faster shutter speeds you may have to increase the ISO. A bird sitting still in bright sunlight - not much shutter speed needed. A bird taking off and I want to freeze wing movement - very high shutter speed needed, so I may have to increase ISO to get the shutter speed I need to "freeze" movement.

Is there a table somewhere with the shutter speed vs minimum ISO available for the FZ100?

Try the manual - here's what the specs say

Shutter Speed Still: 60 - 1/2,000 sec
Movie Mode: 1/30 - 1/20,000 sec (1/8 - 1/20,000 sec on MF operation on Creative Movie Mode)
Starry Sky Mode: 15, 30, 60 sec


SO Sensitivity
(Standard Output Sensitivity) Auto / i.ISO / 100 / 200 / 400 / 800 / 1600
High Sensitivity (1600 - 6400)
