Will the aforementioned lens function properly with the Pentax DSLR cameras? By that, I mean will I be able to manually set the f stop on the camera and have the camera select the correct speed? I know that on some DSLRS, The exposure must be determined external to the camera and all functions manually set on the camera.

I'm guessing that it is a reflecting lens (ie, it uses mirrors rather than glass elements) and that the aperture will be fixed, probably at f8 or f11.

Actually it's an f8 catadioptric lens with a Pentax "K" adapter.

Well, there you go. It's a mirror lens with a fixed, f8 aperture.
