Anybody knowsthe technique to cook this animal?.

We actually seal it in an oven bag with some onions. Can't remember how long but its cooked for an hour or so at 500 and then the oven is turned off but leave it closed, don't even open to peak. Leave it overnight and it will be ready in the morning. An then you have deep fried and smoked.
