Of my ~ 5-600 shots over the weekend this ends up being my favorite, partially because of the car and partially because of the capture being one of the best one of the weekend. Like most of my shots though from the out-of-camera RAW they tend to look less bright and colorful(gloomy cloudy day doesn't help). So I tend to boost my satuation up in RAW processing and boost the contrast as well to make it look more vibrant. But I am wondering if it is too much?

I too was at Mosport last weekend and like you I have about 500 photos. The color of the spyder is just right on your second photo ,more true to the way the color looks when seeing the car up closeup close.I took all my photos in jpeg format and this is what the color is like. This is one of abot 20 photos of the spyder.
