Looks pretty accurate to me?

Do you have any post processing software? I think the Canon software can be used to up the saturation a bit if you are not happy with the way this came out.

A lot of times "dullness" is a reflection of a picture's brightness. Quite often if you just adjust the exposure a bit (lighten it), perhaps change the curve a bit to add contrast and all of a sudden it's not dull any more.

As far as camera changes you can make - you could try adjusting the exposure a bit. Set a +.3 or .7 Ev (not sure how to do that with your camera).

Edited to add - I didn't touch the saturation at all.

I used Lightroom2 and in about two minutes (including import and export) got this:
