In Color Management>Save ICC Profiles in Saved (Converted) Images:

1. Does this option refer to the color space (aRGB, sRGB, etc), or the printer profiles?

2. If printer profiles, why would you want to do this?

It applies to whatever profile the image is using. If you don't specify any profile-to-profile conversion, the image profile is just carried over to the saved image. If you use the profile-to-profile conversion checkbox and specify a printer profile as the "TO" profile, the printer profile will be embedded in the image because you told it to convert to the printer profile.

I can't seem to find the profile-to-profile conversion checkbox. Where is it?

It's near the bottom of the window that pops up when you right click in the queue and select "Convert Images".
