Is there any way to see what the ISO setting is of a video that has already been captured? Specifically I'm using the Xacti C40.

Yes there is. It's called ExifTool and you can get it from here:

It depends on the video file. Not all have the ISO, but I also have the C40 and it does return the ISO.
