I believe you have to be in "A" aperture priority...
I believe you have to be in "A" aperture priority to adjust aperture, and "S" for shutter priority. "P" only lets you adjust ISO, metering, focus area, etc.

flyhigh - I agree that point meter and focus produce the best result. I just wanted to point out that it's difficult to keep the small "x" on a fast moving subject.

Christopher, one caution. Point meter and Point focus settings are great for still subjects but may be very hard to use on fast moving subjects.
