I would like to know how the AS system works. Does the CDD move to counteract the movement of the camera?

yes, that is exactly correct

it will give you a wonderful 'edge'

however, it will NOT correct either:

subject movement

'stabbing' the shutter release (it can't react quickly enough)

extreme hand held telephoto shots

NOTHING WILL BEAT PROPER TECHNIQUE FOR 'anti-shake'

Do you think that it is good idea to turn off the AS during the cleaning of the CCD?

I'm pretty sure that AS will be automatically turned off during CCD cleaning by the software in the camera. (But I still turn mine off for this. You can't be too careful and it takesabout 1 second to do. Call me a hypocrite.)
