I'll at least take care of the Kelvin and ISO myself. The rest depends on how much time I have and the situation. I want to also have control over the focus and metering modes. I shoot in "natural" because I don't know any better. I leave the saturation, noise, etc set to 0. I do use program quite often, not auto, and set + or - EV and choose either shutter or aperture again as necessary. Sometimes your dealing with controlling motion with shutter speed later your dealing with controlling depth of field with aperture as needed. Full manual is then easy to move into as if you were coming from using the S or A modes.
