Default Studio Lighting Advice

Hello! I am needing some advice on studio lighting equipment. I work at a place where I need to set up small aquarium's, place fish inside, and then photgraph them. My boss has asked me to figure out what kind of lighting me need. I have read lots of stuff but I'm still not sure. We had a professional photographer come by a few months ago and he used 2 lights, a fill light and two umbrellas so my boss is looking for a similar set up. I know I want to get continuous lighting and I'm not worried about the heat output from the lights. What I am most unsure about is the intensity of the lights.

How do I know what intensity I need?
Is a soft box better then the umbrella's?
What do I need to look for in a fill light?

I don't know how to shop for lights because I'm not sure what exactly I need. We will be shooting in a warehouse style large dark garage. Any advice you can offer would be appreciated.

i found some handy info about lighting and stuff on the free sample lessons here
a few years ago when we started doing our own shoots, i used those lessons and nothing else, and our stuff came out surprisingly good. we did do a test shoot first with all our gear, to tweak our lighting setup for the first location.
