I'm interested in understanding the pros and cons of:

setting my camera to 'black and white' and then shooting in black and white


shooting in color and then adjusting my shots to black and white in Photoshop CS

I shoot digital, using my Canon A75.

The only possible advantage I can imagine is smaller file sizes--if you're really hurting for space on your memory card. Other than that, shoot in color and have the best of all possible worlds.
You can always convert a color shot to grey scale; you can't convert a grey scale shot back to color.

Experiment, remembering that doing the conversion in-camera gives you one chance with one technique with no chance to change your mind about wanting the image in color. Your camera inherently senses color.

I doubt you will find much, if any, advantage to letting the camera do the conversion.

There are times when you willkick yourself for going just the b/w way as you are bound to have photos that you would have liked in color even if it is just ahandful of images
