Well you can't do that particularly well even with DOF preview. The apparent resolution of the viewfinder is such that with DOF preview depressed, what will appear in the viewfinder as in-focus may not be.
And of course the light coming through is dramatically reduced.
DOF preview is useful in certain types of advanced flash applications.
I personally don't think it's a feature you'll miss. I would hazard that 95% of photographers don't even use it and 99.9% of the time it's not used even by photographers who do use it occasionally.
