Digital cameras attach the Exif information to the .jpg file, which can be read through many image editing programs and free stand-alone Exif readers. Here is an abridged sample from Exif Reader:

ExposureProgram : Manual
ISOSpeedRatings : 100

DateTimeDigitized : 2007:01:02 23:59:36
ComponentConfiguration : YCbCr
CompressedBitsPerPixel : 40/10 (bit/pixel)
ShutterSpeedValue : 1/256Sec
ApertureValue : F8.0
BrightnessValue : EV4.4
ExposureBiasValue : EV0.0
MaxApertureValue : F2.8
MeteringMode : Division
LightSource : Unidentified
Flash : Not fired(Compulsory)

This is from a photo I took of the moon. Is this the type of data you are looking for?

Raw files have this information, too.

But, the ability to read it will vary by the product you use to convert them, since most camera manufacturers don't document their raw file formats.
