Hey Sarah,
Figured I'd let you know what my decision was since you were trying to help me out and were curious.

I was not really able to find out anything on any of the message boards. So, I went to Sam's and picked up an Olympus 1030sw and met with the guy that was selling the Olympus SP-700.

I took pictures with both (try to upload results later) and the result was that the SP-700 pictures were sharper and had less noise than the same picture on the 1030sw. So with the images being clearer and the cost being about 200.00 less with taxes I took back the 1030sw and purchased the SP-700.

I figure this also has the added benefit of being able to test the waterproofness of the case without electronics in it, and I could add a strobe down the line if I ever wanted to get more serious about shooting underwater. Plus the housing on the SP-700 is rated to 40m instead of 10m.
