The earlier Canon G-series models, bought used, should be less $$ than the new G11. This Canon series was highly regarded, it's easy to find good reviews, and sample shots to download. Take a look at the color on those samples. Dunno if it would meet your requirements, but if not, then I think you are headed for a DSLR.

The Panasonic FZ, TZ, and now ZS series have been very popular. But for quiet color it's their FX-series that I would look into. You should be able to pick up a used FX33 or FX35 (not FZ35, that is a whole different critter) for around $200, or less. A FS5 is lower resolution, but used should be under $150. For your purposes I would steer clear of the current Pannys, that company now appears to be cranking up their color saturation to match the competition.
