The only thing that the 1000d has going for it over the pentax k-x is the lens selection. Canon gives you way more high end and low end lenses to chose from like the 50mm 1.8. Remember I shoot a 500D personally, and having played around with the 1000D and the K-x. That is the only thing the 1000D has over the k-x.

But bring a card with you to the shop, shoot with both and take the photos home and examine them to see which you like more. To give it a fair comparison. Shoot both in natural or landscape. As the pentax has vivid and couple of other picture style to choose from.

Very tempted to order myself the K-x. I did try one in a shop yesterday and liked how quick the AF was and the pic quality looked very good on the rear screen.

Obviously i did notice that the AF points didn't light up but the images seems really good! I can get the K-x for 379, new online.

congrats, it is really a good camera. And the best buy among the camera you listed as possible choices. And your wife should be happy, it has HD.

the kit lens takes a 52mm for the 18-55 and 58mm for the 55-300, sanyo eneloop are the best rechargeable out on the market. Low discharge so you are not always having to put them on the charge between uses.
