I would eliminate the D60 because it is an older model.
Of the two remaining cameras, I would probably buy the Canon
1000D because it works with a greater range of new and
used lenses. There is very little difference between them
in terms of image quality. Both are good entry-level DSLRs.
The replacement for the D3000 has already been announced.

Both of these cameras are a bit dated compared to the
latest & greatest. Newer models will have better low light/high ISO
performance and the ability to record video. Unfortunately, they
will also be a bit more expensive. Pentax K-x, Canon 500D and
Nikon D5000 are all worth considering.

If a high ISO capability is important to you consider the Pentax Kx. If you see yourself eventually using Canon DSLR's, then the logical choice is the Canon XS. I have owned and used the Nikon D-60 and D-3000. I ended up selling both. So that should provide some message.

Just remember you are buying into a system, so keep the future in mind. The lenses that you use with and entry level DSLR, you will probably carry forward to use on your next DSLR camera.

Also where are you located vinnybear? As you refer to the XS as the 1000D also. Product support can be another concern, nikon and canon are everywhere. But pentax is not is all markets.

But from you 3 cameras listed the 1000D would be my choice.

The k-x hands down out performs all the camera listed in your poll. That would be my choice if you added k-x.

I tried a Pentax K-X and a Canon 1000D. I prefered the 1000D but eventually bought the 500D!

There is a comforting simplicity to the Canon XS, but the Pentax Kx is clearly the better camera.
