Default Which Camera

So im really into photography and im on a super tight budget and ive narrowed it down to two options (Maybe?) im between a nikon p100 which is feature packed with a great zoom and ok image quality or a sony a330 body (I just bought a minolta film camera so i dont need the lens) which has a way bigger sensor. So which one (or maybe a different one i would prefer under $300)

Well those are two very different cameras so the first thing is to decide what type of camera you want. If you stick with bridge cameras, I'd certainly recommend the Panasonic FZ35 or FZ40 over the Nikon P100, both in terms of IQ and just overall refinement.

I know but im sort of between whats better for me the bridge or the dslr because the bridge has the features and worse image quality but the dslr is basically stripped down but with wayy better image quality

Well one way to look at it, is: do you specifically go out to take photos or do you go out and simply take the camera along? If it's the former, go DSLR; if it's the latter, go with the bridge because you're more likely to take it with you.
