Ashe- I don't own a G3, but two of my friends own G3's and their results are very good- and they only have the standard kit lenses attached.
A switch from Canon...? Depends on several factors- and only you could decide that- but above all,I'd suggest trying one out first- you may not like an EVF or the way it handles.

A good,detailed review- with comparisons to the 600D and Nikon's D5100.....

I use UFRaw to convert from RAW to a more convenient format like 16 bit
TIFF. I usually use Gimp for editing. Both programs run on Linux, so the RAW
converter, editor and operating system are all free.
