All great cameras. For portrait work, the lens and external lighting will be a much larger contributor to your success than camera body. All 3 systems have appropriate lenses/flash for what you want to do. Make sure you hand-hold all 3 and use them in a store. Go with whichever camera feels best in your hands.

The A57 and D5100 both use the same excellent Sony 16MP sensor, which according to DxOMark, has less noise and greater dynamic range than the Canon.

The D5100 is an especially good buy right now, as it will soon be replaced with the 24MP D5200. The money you save on the body can be put to better use on lenses. I'd skip the kit lenses (whichever camera you go with) and pick from among the appropriate lenses. Sony has some excellent lenses for your purposes, but they are extraordinarily expensive. Nikon's 85mm f/1.8 AF-S ($459) is better than Canon's EF 85mm f/1.8 USM ($359), and has less CA and a larger maximum aperture than Sony's 85mm f/2.8 ($273.) Another popular portrait lens is the 24-70mm f/2.8, Sigma's version, available for all the cameras you're looking at is pretty good and the least expensive at $824, The new Tamron is a little sharper, and it's stabilized, but it costs a lot more at $1,299. The Canon, Nikon, and Sony versions of this lens are all around the $2,000 range.

So, the D5100 is cheaper and has less Noise and more dynamic range, it's 85mm prime is better than the equivalent lenses from Canon and Sony, and you can get the Sigma or Tamron 24-70/2.8 for any of the bodies you're considering. I'd go for the Nikon.

The Nikon D5100 and the Sony A57 both use the same 16MP sensor, so they have the same resolution.

Plus, the Nikon has a better selection of lenses for your purposes.
