Why is the head the first to go?

I have seen this behavior many times with different raptors.

Great capture. I especially like the light on this one. I know that certain animals eat the head first because it's the only, or mostdangerous part.

great shootin don! and you said you have trouble with BIF shots. not! heheh
i would imagine they eat the head first inorder to incapacitate the fish and prevent it from wiggling around in flight. just a guess.
