Hi, Im new here and just bought myself a 500 mm mirror lens. I love the photos shown here but am wondering at what distance the shots were taken?

It has been a while for accurate memory to remain, but the location is a familiar one and I remember the incident - the first was not far - maybe 30 - 50 feet; the others were easily twice that or more - very small in the viewfinder and as a result they are heavily cropped (= enlarged) and postprocessed. Enjoy your new lens - if it is the Minolta/Sony the autofocus makes using it a breeze with moving subjects; if any other make, accurate manual focusing will be critical. and it will be best on still or slowly moving subjects.
